For the mussel vinaigrette: infuse the saffron in the vinegar for 10 minutes.
 
Mussels Vinaigrette
Preparation time: 30 minutes
Serves: four 
 
2 dosen mussels, cleaned and scrubbed
1 small green bell pepper, seeded cut into 1/4-inch dice
1 small red bell pepper, seeded cut into 1/4-inch dice
1 small yellow bell pepper, seeded cut into 1/4-inch dice
1/2 cup olive oil
1/4 cup red wine vinegar
2 tablespoon chopped parsley
1 hard cooked egg chopped
1/2 salt
1 pinch pepper
 
1. Steam mussels in small amout of boiling water just until they open,
about 3 to 5 mins. Drain.

2. Remove one side of mussle shell leaving mussle on remaining shell.
